I googled for perfect sponge cake, and found this.
Quick, easy, and delicious.
Super light.
It's now my perfect sponge cake. :) Tastes just like the chinese 鸡蛋糕
Review – the cake disappeared in 1.5 hours. I ate a quarter of it, half by dad, quarter by cyn. Mom didn’t even get to try it!
- Me: A bit too sweet. Top was nice and crunchy (was a little charred). Cake was quite nice and fluffy. It tastes like 鸡蛋糕, probably because it’s made up predominantly of egg. But I actually kind of like it.
- Dad and Cyn: Nice. Like鸡蛋糕.

Just in case the recipe disappears online, I'm just gonna copy it here:
RECIPE
Ingredients:
6 eggs
180g sugar
75 g flour
75 g corn flour / corn starch
Pinch of salt
(optional - grated rind of 1/2 lemon)
Method:
Put eggs and sugar into a bowl and beat for about 15 mins until you have a frothy foamy mixture
Add the flours by sifting them into the mixture and folding gently with a wooden spoon.
Put the mixture into a well greased cake tin, level out the mixture and cook in a pre heated over at 150C for about 40 mins
Original author says this can be used as a base for tiramisu or trifle and is also delicious on its own with just a dusting of powdered sugar. (Yes it is delicious on its own!!)
